For the Consommé: - 2 cups beef broth - 1 cup water - 2 tablespoons tomato paste - 2 tablespoons lard or vegetable shortening (optional) - 1/4 cup chopped fresh cilantro (optional) For the Tacos: - 8-10 corn tortillas - Sliced radishes - Chopped fresh cilantro - Lime wedges - Sour cream or Mexican crema (optional) - Queso fresco or shredded cheese (optional) Instructions: 1. In a large Dutch oven, heat oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute. 2. Add the beef and cook until browned, about 5 minutes. Add the chilies, cumin, paprika, salt, and pepper. Cook for 1 minute. 3. Add the broth, water, tomato paste, and lard (if using). Bring to a boil, then cover and transfer to the oven. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. 7. Assemble the tacos by spooning the birria meat onto a tortilla, followed by a spoonful of the consommé.
